Christmas eve 2016!

Christmas is like the best season in a year, right? Im sure everyone is agree 🙂 Decorating the tree always lit up the ambience of our house. Kids love to make their own christmas tree ornaments and hang them on the tree. 

Cupcake liners, cupcake frosting themes, cookies, everything christmasy are so waited! I do the Santa Claus routine every year.. Kids have to write their own wishlist and prepare some cookies for Santa. 
When it comes to baking time, im on the front liner. I love to bake for my little family or to share with neighbors. This year’s christmas cake i made was yellow-cake-based. So i made 1 big batch of yellow cake batter and divide them into some smaller batch and make different flavour. Make it simple right? Just one batter for them all! Lol! 

The batter itself was so forgiving, it can be any cake you wanted. This year i made lemon curd cake, strawberry jam cake, fruit cake with rum and the grinch cupcake. All was soooo greaaaat!

When i decorate the cupcake i felt so excited! Because, you know, its The Grinch! The bright color of green and red, that so yellow eye and the eyebrows, all were sooooo cute ! That was my first time making Grinch as a theme. Was fun and willing to do it again some day. 

Here is the yellow cake recipe:

3 cups all purpose flour, sifted

3 1/2 teaspoons baking powder

1/2 teaspoon salt

3/4 grams unsalted butter, room temprature

1 1/3 cups granulated sugar

6 large egg yolks

1 cup full milk

2 teaspoons vanilla extract
Baking instructions:

1. Preheat your oven to 180c

2. Prepare all your baking liner and pans, also the lemon curd, strawberry jam,  and dried fruit (i will write recipe about this below)

3. Sift and whisk the flour, baking powder and salt

4. Beat butter until pale (1-3minutes). Gradually add the sugar and beat until light and fluffy (5-7minutes). Add egg yolks one at a time and keep beating in low speed.

5. Add the flour in three batches and milk in two batches. So its flour then milk then flour again and milk again and so it goes until finished. In low speed.

By this step, i divide my batter into 4 small equal batches. You can measure it if you want. Because i want to make 4 kind of cakes. As i wrote, i made lemon curd cake, strawberry jam cake, fruit in rum cake, and cupcake with frosting.

Lemon curd cake:

1/4 part of batter

4 tablespoons lemon curd (will write the recipe in another posting, or maybe you can have your own recipe, will do too)
Strawberry cake:

1/4 part of batter

3 tablespoons strawberry jam
Fruit in rum cake:

The day before, i soaked 1 cup mix dried fruit with 2 tablespoons rum and put it on the fridge. Leave it for 12 hours or so. 

1/4 part of batter

1 cup mix dried fruit
The Grinch cupcake:

For the frosting, i beat :

1 cup butter, room temperature

4 cups powdered sugar

1 tablespoon milk

2 teaspoons vanilla extract

And give em some food coloring
So there you go the full recipe of my 2016 christmas eve cake gallore. It was fun for the kids to do the mixing as well as decorating them. Involved your kids, tell them stories about christmas eve. They will learn easier you couldnt believe. Enjoy!
