Lemon Pound Cake with Lemon Sugar Glaze

​​After napping time, somehow, my kids always wanted to do snacks. Many times, they wanted to have sweet snack like cakes, cupcakes, or just jellies. 

Small bite cakes is my all time choice for them. No need to slice them. They can grab it whenever they wanted. Very simple ingredients you can find on your shelf, small time consuming, and of couse its failproof!

I found this recipe and i know my children would love it. I cut the recipe into half. So i got small batch of loaf cake. If you need small batch loaf cake, here is the recipe.


Lemon Pound Cake:

1/2 cup unsalted butter, room temperature

1 1/2 cups all purpose flour

1/4 teaspoon baking soda

1 tablespoon finely grated lemon zest (from 1 lemon)

1 1/4 cups granulated sugar

3 large eggs

1/2 teaspoon vanilla extract

1/2 cup sour cream

Instructions:

1. Preheat oven to 175c. Butter your pan and dust with flour if you want. Just to cover, so they wont stick.

2. Whisk together flour, salt, baking soda and lemon zest in a bowl and set aside.

3. Beat butter and granulated sugar until pale and fluffy, about 5 minutes or so. Add eggs , 1 at a time, beating well after each addition, mix in vanilla. Reduce speed to low and beat in flour mixture in 3 batches, alternating with 2 batches of sour cream.

4. Bake them well.

Lemon Sugar Glaze:

1 cup powdered sugar

2-3 tablespoons fresh lemon juice (from 1 lemon)

Mix them well and done 🙂 

Its a perfect combination between sugary sweet and tangy. Fresh and great for afternoon snack time .
